How to make a simple strawberry & cranberry compote.
1-2 tbsp sugar (add more sugar if you like)
pinch of cinnamon and nutmeg for extra flavour (optional)
juice from half a lemon
1. In a pot on the stove, cook all of the ingredients on medium heat until the mixture starts to boil, then reduce the heat and simmer for about 15 minutes or until the mixture starts to resemble a berry compute.
2. Remove from the heat and let it cool down. Mix in a tbsp of chia seeds (optional).
3. Assemble the toast: on your bread of choice, spread a generous layer of peanut butter, top with berry compote, and enjoy!
