Servings: 6 pieces
Ingredients
-
For the doughnuts
-
125g flour
-
75g sugar
-
75ml coconut oil
-
1/2 tsp vanilla extract
-
Pinch of salt
-
1/2 tsp baking soda
-
1/2 tbsp apple cider vinegar
-
100g apple sauce
-
100ml soy milk
-
-
For the Glaze
-
2 tbsp Twisted Nut Crunchy Almond Butter
-
3 tbsp icing sugar
-
1-2 tbsp soy milk
-
1/2 tsp vanilla extract
-
Instructions
-
Preheat the oven at 180℃. Grease the doughnut tray with a bit of coconut oil to prevent sticking and set aside.
-
Mix all the dry ingredients in a bowl. In a separate box mix all the wet ingredients. Then combine and mix with a hand mixer (don't over mix).
-
Pour the batter in the pan, about 2 tbsp per doughnut (make sure you don't fill the holes to the top as they will rise in the oven).
-
Bake for about 15-18 minutes, depending on your oven. Test that it's baked all the way through with a toothpick before removing from the oven and setting aside to cool.
-
Prepare the icing by mixing the ingredients together. Start off by adding 1 tbsp of milk, add another if you see the icing is too thick.
-
Once the doughnuts have cooled completely, top with the glaze and some chopped almond pieces. Enjoy!
