Another Take on Toast: Almond Butter Toast Topped with Fig Jam, Nuts and Maple Syrup

How to make a simple fig jam.

You'll need:

300g figs

1-2 tbsp sugar (add more sugar if you like)

1tsp vanilla extract

juice from half a lemon

1. Clean and remove the steam from the figs. Puree them using a food processor or a blender.

2. In a pot on the stove, cook all of the ingredients on medium heat until the mixture starts to boil, then reduce the heat and simmer for about 10-15 minutes or until the mixture starts to have a jam consistency.

3. Remove from the heat and let it cool down.

4. Assemble the toast: on your bread of choice, spread a generous layer of almond butter, top with fig jam, chopped hazelnuts or pecans, and drizzle some maple syrup on top. Enjoy!
