For the caramelized apples:
1tsp vanilla extract
2 tbsp coconut oil
2 tbsp maple syrup
juice from half a lemon
1. In a pan, melt 2 tbsp coconut oil.
2. Chop the apples in thin slices and throw in the pan. Add the rest of the ingredients and stir well so that the apple slices are evenly coated.
3. Simmer for 5-10 mins or until the slices start to soften and get golden. Remove them from the pan earlier if you like them to retain some of the crunch.
4. Let them cool a bit.
5. Assemble the toast: on your bread of choice, spread a generous layer of peanut butter, and top with apple slices. Enjoy!
